Good morning, I hope you all enjoyed your Thanksgiving! I had a nice day with my family watching the Macy’s parade, baking a pumpkin pie, sneaking one too many dinner rolls, and catching the end of a football game. Now, I’m about to go out Black Friday shopping with my mom. But first, I wanted to share a delicious breakfast recipe that can quickly be created with your holiday leftovers!

Earlier this month, I reviewed The Kitchen Matrix by Mark Bittman and mentioned there were 20+ Thanksgiving leftover recipes included. As promised, I’ve tried one of the recipes and it certainly does not disappoint. My favorite part about Thanksgiving dinner is the stuffing and I’m always sent home with leftovers. It only makes sense that I chose to try one of the stuffing recipes and it turns out to be absolutely perfect for Black Friday morning.

Eggs Baked in Stuffing

• Leftover Stuffing
• Fresh Eggs
• Parmesan Cheese

*Exact measurements not included based on personal preference

  1. Pre-heat your oven to 375°
  2. Grease a baking dish OR individual ramekins
  3. Line your dish with a layer of stuffing
  4. Make wells in your stuffing and crack eggs into them
  5. Bake for 10-15 minutes
  6. Sprinkle with parmesan and enjoy!

This recipe turned out to be ideal for Black Friday morning because it was extremely easy and quick to make. You can prep, cook, eat, and clean this dish within half an hour! Heating the leftover stuffing in the oven adds a really nice crispness to the bread. Additionally, the eggs provide a silky texture that pairs beautifully with the stuffing. It is SO delicious.

The best part about this newly favorite recipe of mine, is the easy clean-up. After all the cooking and cleaning previously done on Thanksgiving, it’s wonderful only needing to wash a couple of dishes! While I’ve only tried this one recipe from The Kitchen Matrix so far, I’m really excited to experiment with more. This year, remember to get creative with your holiday leftovers and I highly recommend giving this recipe a try!
